MANDARIN SALAD image

Yield 4-6 servings

Number Of Ingredients 14

1/2 cup almonds
3 Tablespoons sugar
1/2 head iceberg lettuce
1/2 head romaine lettuce
2 whole green onions, chopped
1 11-ounce can mandarin oranges, drained
Dressing: (Or just use Hendricksons Salad Dressing)
1/2 teaspoon salt
dash pepper
1/4 cup oil
1 Tablespoon parsley
2 Tablespoons vinegar (can use balsamic, for variety)
2 Tablespoons sugar
dash of worcertershire sauce

Steps:

  • In small pan, over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar dissolved. Watch carefully, as they will burn easily. Cool on waxed paper and store in air-tight container, if you have left-overs. Mix all dressing ingredients and chill. Tear or slice lettuces; mix lettuces and onions in pretty bowl; chill. Just before serving, add almonds and mandarin oranges. Toss with the dressing.
