Mandarin-Berry Tossed salad image

My family loves this salad . I plant the spinach early and hope we don't have a late frost to freeze the tiny green leaves. Mixed greens can also be used.I think it is the dressing that makes this salad sooo good.

Number Of Ingredients 15

1/4 c sugar
2 Tbsp cider vinegar
2 Tbsp honey
1-1/4 tsp lemon juice, fresh
1/2 tsp paprika
1/2 tsp ground mustard
1/4 tsp celery seed
dash of salt
1/3 c vegetable oil
8 c mixed salad greens ( we like mostly spinach)
2 c sliced fresh strawberries
1 can(s) 11 oz mandarin oranges drained
1 medium sweet onion sliced into rings
1/3 c slivered almonds, toasted
4 slice bacon strips cooked and crumbled

Steps:

  • 1. In a cup microwave bowl, combine the first 8 ingredients. microwave , uncovered on high for 1 to 2 minutes , stir until sugar is dissolved. Whisk in oil. Cover and refrigerate until serving in salad .
  • 2. In a large salad bowl combine the greens, strawberries, oranges, onion, almonds, and bacon. Drizzle with the cooled dressing and gently toss.
