MAMA’S MARINARA & MEATBALLS image

For Sauce:
3 crushed garlic cloves
½ yellow onion
3 tbsp. olive oil
2 28oz. cans tomato puree
1 tbsp tomato paste
1 cup chicken broth
1 tsp sugar
Salt & red pepper flakes
For Meatballs:
1/3 cup chicken stock
¼ yellow onion
1 clove garlic
1/4 cup fresh Italian parsley
1 ½ lbs. ground beef, veal & pork mixed
1/3 cup plain bread crumbs
2 eggs
¼ cup grated parigiano-reggiano
1 tsp Red pepper flakes
1 tsp salt
¼ cup extra virgin olive oil

Steps:

  • Sauce: Cook Garlic & onion in olive oil on med/low heat until garlic is tender & onion is translucent. Add all tomato products. Pour chicken broth into one of the 28 oz. cans & fill rest with water, add to pot with sugar. Stir & bring to simmer. Taste & season with red pepper flakes & salt. Cover & simmer for one hour. Sauce should be fairly thin but not watery and very smooth. Add water if too thick. If too thin, uncover & simmer for 3 min. For Meatballs: Place chicken stock, garlic & onions in food processor and puree. In large bowl, combine pureed stock mix, meat, bread crumbs, eggs, parmigiano-reggiano, pepper flakes & salt. Combine with hands until mixture is uniform. Form into balls a little larger than golf balls. Brown meatballs in olive oil, well on all sides. Place in Mama's Sauce and simmer for one hour, stir (gently) occasionally.
