MACARONI, TOMATO, CORN & BASIL SALAD image

Number Of Ingredients 1

3/4 cup uncooked elbow macaroni - 4 med toms cut into thin wedges - 5 green onions thinly sliced - 1 cup thin slices halved cucumber - 1 cup fresh corn kernels- 1 cup packed fresh basil leaves - 1/3 cup plain yogurt - 3 tbl mayo - 1 1/2 tbl lime juice - 2 garlic cloves peeled

Steps:

  • cook macaroni until just tender but still firm - drain - rinse under cold water - drain well - transfer to lg bowl - add toms, gr onions, cucumber & corn blend basil, yogurt, mayo, lime juice & garlic in processor until basil is finely chopped - add basil drsg to macaroni & toss to blend - season salad c salt & pepper
