MACARONI & CHEESE BITES image

Number Of Ingredients 11

2 Tbsp unsalted butter, melted
2 Tbsp. olive oil
2 c. Ritz Cracker crumbs
1/4 stick butter
1/4 c. flour
1 1/2 c. milk
1 c. heavy cream
1 Tbsp. Dijon mustard
1/2 lb. macaroni, cooked al dente
1 lb. extra sharp cheddar
6 chives, sliced into 3/4″ slices

Steps:

  • 1) In a medium mixing bowl, combine melted butter, oil, and Ritz crumbs. Preheat oven to 350 degrees. 2) In a saucepan, melt butter and add flour cooking for 3 minutes. Add milk, cream, and Dijon and bring to a simmer. Let thicken and add cheese. 3) In a mixing bowl, add macaroni and cheese mixture. Mix well and pour into a 9″ square baking dish. Top with 1/2 of the crumb mixture. Bake for 30 minutes. When done, scoop a teaspoon of warm macaroni and cheese into each frico cup. Top with Ritz crumbs and a chive. Serve immediately.
