Yield 4 servings

Number Of Ingredients 10

5 oz small elbow macaroni
4 T butter
2/3 C fresh breadcrumbs
3 T flour
2-1/2 C whole milk
salt and pepper to taste
1/4 t cayenne
8 oz medium white cheddar
8 oz fresh dungeness crabmeat
3 T chopped parsley

Steps:

  • Preheat oven to 375 degrees. Butter a 8 X 8 inch baking dish. Grate cheese. Cook pasta until barely al dente. Drain and rinse well. Heat 1 T butter in a medium sized sauce pan. Add bread crumbs and stir thoroughly. Remove bread crumbs from pan and wipe clean. In a small sauce pan, heat the milk until hot but not scalded. In the saute pan used for the breadcrumbs, heat the remaining butter over medium heat. When butter is melted, wisk in flour and stir until cooked, about 2 minutes. Slowly add hot milk, wisking continuously until incorporated. Cook sauce for about 5 minutes, or until thickened. Remove sauce from heat, and add all but one half cup of the grated cheese, cayenne, parsley and salt and pepper to taste. Fold crab into sauce, and then add pasta. Pour mixture into prepared dish. Sprinkle remaining cheese and bread crumbs over the top. Bake for 30 minutes or until the top is browned. Let sit for 5 minutes, then serve.
