LOWFAT VEGETABLE LASAGNA image

1 small ctr FF sour cream
1 small ctr FF cottage cheese
1 box FF cream cheese
1/2 green bell pepper
crushed garlic-1-2 TB to taste
1 box lasagna noodles
1-2 jars favorite pasta sauce
vegetables of choice( I like green pepper, mushroom, onions, zucchini)
Parmesan cheese to top

Steps:

  • Mix the cream cheese, sour cream, cottage cheese, garlic, and finely chopped green pepper. Set aside, this is your cheese layer. To assemble, spread a thin layer of sauce on the bottom of a 9x13 pan. Next layer your uncooked noodles. Next, layer your uncooked vegetables, as the water from these veggies help cook the noodles. Next, the cheese layer. Repeat all layers, finishing with sauce and a sprinkling of parmesan cheese on top. Cook at 350 for 45-60 minutes. Let cool, as the cheese layer firms up as it cools a little. So yummy, and reheats well!
