LOW CARB CHEESY CUCUMBER BOATS image

1 small "pickling" cucumber, about 4-5" long, cut in half lengthwise and seeds scooped out
3 oz whipped cream cheese, softened
1 Tablespoon mayonnaise
1/4 teaspoon dried basil or dill
4 slices turkey bacon, cooked and crumbled
1 slice smoked deli turkey, diced finely
1 tablespoon pimiento peppers, diced
1 tablespoon parmesan cheese, grated
1 6" whole wheat or low-carb tortilla

Steps:

  • In a medium bowl, stir together cream cheese, mayonnaise, dill, bacon, diced turkey, pimientos, and paremsan until well mixed. Pipe or spoon into the hollowed out cucumber halves. Slice the round edges off the tortilla to make it square. Slice the square diagonally to make two triangles for the "sails." Gently "thread" a 4-6" wooden skewer through the long side of each triangle to resemble the "sail" of a boat. Place the skewer through the middle of the cucumber so that it looks like a sailboat. Place the boats (laid flat) into a plastic reusable container so that they remain intact.
