LOUISE'S COFFEE POT DE CRÈME image

2 cups whipping cream
½ cup sugar
3 tablespoons instant coffee crystals
1 teaspoon vanilla
6 egg yolks
3 tablespoons rum

Steps:

  • Scald cream in a saucepan. Do not boil. Add sugar and coffee, stirring until coffee dissolves. Stir in vanilla. Beat egg yolks until lemon colored. Add rum. Add to cream, stirring briskly. Strain into 6-ounce baking cups and bake at 325º for 25 minutes.
