LORIN'S BANANA BREAD FOR NURSING MOTHERS/ LORIN'S LACTATION BANANA BREAD image

Yield 1 loaf

Number Of Ingredients 17

2 Tblsp flax seed meal
4 Tblsp water
1 3/4 c all purpose flour
1 1/4 c quick cook oats
1/2 tsp salt
1 tsp baking soda
4 Tblsp brewers yeast (sifted)
1 tsp ground fenugreek seeds
1/2 tsp ground cinnamon
1/2 c butter (softened)
3 eggs
1 c sugar or 3/4 c agave syrup
1 1/4 c mashed bananas
(about 2 lrg or 3 med bananas)
2 Tblsp milk
1 tsp vanilla
1/2 cup chopped pecans or walnuts

Steps:

  • Preheat oven to 350. Grease a 10 in loaf pan. In a small cup or bowl mix together the water and flax seed meal. Set aside. In a medium bowl, use a whisk to blend the flour, oats, salt, baking soda, brewers yeast, fenugreek and cinnamon. Use a mixer on low to mix together the butter, eggs, sugar, banana and milk. Add the vanilla and flax and turn the speed up to medium for about a minute. Use a rubber spatula to incorporate the flour mixture into the banana mixture 1/3 at a time. Sir in the nuts. Scrape into the loaf pan and place in the oven for 50-60 minutes. Cool for 10 minutes and remove from pan. Let cool completely.
