Lone Star Rice image

A delicious rice dish from the state of Texas.

Number Of Ingredients 11

1/2 c chopped onion
1/4 c chopped green bell pepper
2 Tbsp cooking oil
1 c uncooked long-grain white rice
1/2 c canned tomatoes with green chilies
1/4 tsp ground turmeric
1 tsp ground cumin
1/2 tsp salt
1/4 tsp garlic powder
2 c water
2-3 Tbsp chopped fresh cilantro

Steps:

  • 1. In a skillet, sauté the onion and green pepper in oil for about 2 minutes.
  • 2. Add the rice and stir until coated with oil.
  • 3. Add the tomatoes, turmeric, cumin, salt, garlic powder and water, and bring to a boil. Reduce heat, cover and simmer about 20 minutes or until liquid is absorbed.
  • 4. Stir in fresh chopped cilantro, and serve.
