Lobster Salad image

5 lbs cooked lobster meat
2 yellow bell peppers, seeded and diced
3 stalks celery, diced
1 large white onion, diced
1 cup mayonnaise
1 tablespoon ground black pepper
2 avocados
12 cherry tomatoes (for garnish)
2 cups of fresh arugula

Steps:

  • In a large bowl, mix together the lobster meat, peppers, celery, onion, mayonnaise and pepper until combined. Chill before serving. Spoon mixture into a ramekins to mold into shape, gently place into center of a plate maintaining it's form.
  • slice avocado and place in center of plate.
  • Spoon mixture into ramekins to mold into shape and chill.
  • Gently place lobster salad filled ramekin on top of sliced avocado being careful to keep salad in its molded form.
  • Garnish plate with sliced cherry tomatoes and cocktail sauce.
  • Top with fresh arugula.
