LOBSTER POTATO SALAD image

6 medium red potatoes, scrube
6 eggs
1/4 cup plus 2 tbsps mayonnaise
2 tbsp Creole mustard or whole-grain mustard
1/2 tsp cayenne pepper, or to taste
salt
3 pounds cooked lobster meat, coarsely chopped

Steps:

  • 1. Bring a large saucepan of lightly salted water to boil. Add the potatoes and boil until the potatoes are tender and can easily be pierced with a fork. Drain and allow the potatoes to cool. Cut into cubes. 2. Bring another large saucepan of water to a boil. Add the eggs and boil 8 minutes, until hard. Remove the eggs from the water and allow to cool. 3. Remove the shells from the eggs. Slice the eggs in half and separate the egg whites from the egg yolks. Coarsely chop the white and set aside. Place the egg yolks in a medium bowl and add the mayonnaise, mustard, and cayenne pepper. Mash the ingredients together until the mixture is smooth. Add salt to taste. 4. Add the lobster meat, potatoes, and the egg whites to the egg yolk mixture. Mix well. Chill before serving.
