LENTILS WITH BACON image

Number Of Ingredients 9

6 strips bacon
1 onion diced small
2 cloves garlic, minced
1 cup lentils
1 bay leaf
3.5 cups chicken stock or water
1 tsp thyme
1.2 tsp salt
ground pepper to taste

Steps:

  • Cook bacon in stockpot over medium heat until crisp. Remove and reserve bacon. Pour out all but 2 tbl fat and add onion, cooking for about five minutes over medium-high heat. Add garlic and cook until fragrant about 45 seconds. Add remaining ingredients, increase heat to high. Heat to boil then reduce heat to a simmer and cook until lentils are tender, about 30- 40 minutes. Lentils can be partially pureed wit a stick blender. Serve with garnished bacon.
