LENTIL SALAD image

Number Of Ingredients 12

1 can yellow lentils
2 green onions
1 red pepper
1/2 cup dried currants
Dressing
1/3 cup vegetable oil
1/4 cup red wine vinegar
1 tsp. dijon mustard
1 tsp curry powder
1/2 tsp cinnamon
1/2 tsp cumin
pinch of ground cloves

Steps:

  • In one bowl add rinsed can of lentils, finely chop green onions, finely chop red pepper, add currants. Make dressing and pour over lentil mix. Let flavours mingle before serving.
