NINO'S LASAGNE image

Number Of Ingredients 22

9 lasagna noodles (about 1/2 pound) or mafalda
1 Cup (1/4 pound) grated parmesan cheese
1 Cup (1/4 pound) grated mozzarella cheese
MEAT SAUCE:
1 medium onion, chopped
3 garlic cloves, finely chopped
1 celery stalk, finely chopped
1 tablespoon finely chopped parsley
1/2 medium carrot, finely chopped
1 (5-1/2 ounce) can tomato paste
1 (28 ounce) can tomatoes, crushed
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon basil
1/2 bay leaf
1 teaspoon sugar
1-1/2 pounds ground beef
CREAM SAUCE:
1/2 cup butter
1/2 cup flour
3-3/4 cups milk
Pinch EACH salt, pepper, sugar, nutmeg, cinnamon

Steps:

  • Cook lasagna noodles according to package directions. To make meat sauce, saute in small amount of oil, onion, garlic, celery, parsley and carrot. Add tomato paste, tomatoes, spices and sugar. Saute ground beef in skillet and add to sauce; simmer two hours. To make cream sauce, melt butter, add flour, stirring to mix; add milk, stirring until smooth and thickened. Add remaining ingredients. Lightly oil a 13x9 inch oblong casserole. Layer noodles, meat sauce, cream sauce, parmesan and mozzarella cheese; repeat layers twice. Bake in moderate over, 350 deg. F., one hour. Turn off oven, open door and allow to stand 15 minutes before service.
