Lentil Frankfurter Soup image

A unique addition to lentil soup.

1 cup dry lentils, rinsed
2 slices bacon, diced
½ cup chopped onion
1 cup chopped celery
½ cup chopped carrots
8 cups water
2 cups canned tomatoes
1 bay leaf
6 frankfurters, sliced
salt to taste
ground black pepper to taste

Steps:

  • Saute bacon and onion.
  • Place lentils, bacon, onion, celery, carrots, water or stock, tomatoes, and bay leaf together in a large pot and simmer until tender, about 45 minutes.
  • Add sliced wieners and salt and pepper to taste, and continue cooking for about 10 minutes.
