LEMONY SALMON & RICE image

This is my own concoction, something I threw together when I needed something quick and a little different. To my surprise I found it was quite tasty! Sometimes I use white rice, sometimes brown, or even wild. And I may use pine nuts or slivered almonds--maybe even chopped pecans or walnuts. It's fun to experiment with this dish and it always comes out delicious!

Number Of Ingredients 5

1 package(s) boil-n-bag rice
1 can(s) (5 oz.) skinless & boneless prime fillet atlantic salmon
1/4 cup(s) pine nuts or other chopped nuts
2 teaspoon(s) lemon juice
- salt & pepper to taste

Steps:

  • Place one bag of rice into boiling water in a medium size pot; simmer for 10 minutes. Pour out water and empty the rice into the pot.
  • Add the salmon, having discarded about half of the liquid from the can. Flake salmon into rice. Add the nuts and lemon juice. Stir gently until all is mixed.
  • Heat about 5 more minutes, just until mixture is hot. Season with salt and pepper to taste.
