Lemony Cranberry Bundt Cake image

I love cranberries and I stock up on them during the holidays so I'll have them year round. All you need with this cake is a nice cup of coffee or tea.

1 box lemon cake mix
1 pkg 3 oz cream cheese
3/4 c milk
4 eggs
1 1/4 c ground or chopped cranberries (if frozen, chop while still frozen)
1/2 c nuts, chopped
1/4 c sugar

Steps:

  • 1. Mix cake mix with softened cream cheese and milk. Beat 2 minutes with mixer at medium speed. Add eggs and blend - beat 2 additional minutes.
  • 2. Combine cranberries, sugar and nuts and fold into batter.
  • 3. Pour into a well-greased and floured bundt pan. Bake at 350 degrees for 1 hour or until a toothpick in the center comes out clean. Cook 5 minutes and turn onto a wire rack to cool. Dust with powdered sugar.
