Lemon Garlic Chicken with Zucchini Noodles Meal Prep image

Chicken is coated with a lemon garlic butter sauce and served with zucchini noodles. This is a low carb, keto friendly meal that can be made ahead of time for your weekly meal prep.

Number Of Ingredients 11

3 tbsp unsalted butter
6 cloves garlic (minced)
1/2 tsp garlic powder
1/4 tsp onion powder
1 tbsp low sodium soy sauce
2 tbsp lemon juice (fresh squeezed (about half a lemon))
1 tbsp olive oil
1 lb chicken tenders (cut into bite-sized pieces)
salt to taste
1 tbsp parsley (finely chopped)
4 large zucchini (spiralized)

Steps:

  • In a small saucepan, and butter and garlic. Cook over low medium heat until butter is melted and garlic starts to brown and the flavor of the garlic is infused with the butter. Stir in the garlic powder, onion powder, soy sauce and lemon juice. Taste and adjust as needed. Set aside.
  • In a large nonstick skillet, add oil and bring the skillet to medium-high heat. Add in chicken pieces. Sear chicken on both sides until they are golden brown.
  • Add 2 1/2 tbsp lemon garlic butter sauce over chicken. Cook a few minutes until chicken is completely cooked, the sauce has thickened and is evenly coated over chicken. Season with salt if needed. Sprinkle half of the parsley over chicken.
  • Remove chicken from skillet and divide into meal prep containers.
  • Using the same skillet, add in the zucchini noodles and bring to medium-high heat. Add in remaining lemon garlic butter sauce. Sautee zucchini noodles until they are fully cooked. Season with salt as needed. Sprinkle remaining parsley over zucchini.
  • Drain water from zucchini noodles and then add to meal prep containers. If desired, squeeze fresh lemon juice over food before eating.
