Lemon Crinkle Cookies image

After tweaking this recipe three times I finally have come up with what I think is the perfectly lemony cookie. Not too strong. Not too sweet. Just right

1/2 cup(s) butter
1 cup(s) sugar
1/2 teaspoon(s) vanilla extract
1 egg
2 tablespoon(s) lemon zest
1 tablespoon(s) fresh lemon juice
1/4 teaspoon(s) baking piwder
1/8 teaspoon(s) baking soda
1-1/2 cup(s) flour
1/2 cup(s) powdered sugar

Steps:

  • Preheat oven 350 degrees, cover baking sheet with parchment paper
  • In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again.

  • Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on the baking sheet and repeat with remaining dough.
  • * Bake for 12 - 15 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to a cooling rack.
