Lemon Cheesecake Bars image

These bars are creamy and yummy! They do not last long in the house or at a gathering!

Number Of Ingredients 8

1 pkg. lemon cake mix
1/3 c butter softened
1 egg
1 8 oz. pkg cream cheese softened
1 c powder sugar
2 Tbsp grated lemon peel
2 Tbsp lemon juice
2 eggs

Steps:

  • 1. Blend dry cake mix, butter and 1 egg. Press into a greased 13x9 pan.
  • 2. Beat cream cheese until smooth. Gradually blend in powder sugar. Stir in lemon juice and peel until smooth. Reserve 1/2 cup and refrigerate it. Beat 2 eggs into remaining or un-reserved cream cheese mixutre until blended.
  • 3. Spread over cake mixture. Bake at 350 until set, around 25 mins. Cool completely. Spread with reserved cream cheese mixture. Refrigerate until firm.
