Lemon Butter Roasted Chicken image

This succulent chicken is baked to perfection. The herbs and lemon mixture permeate through the chicken while baking. As if the zing of garlic and lemon isn't enough, a small dollop of lemon flavored butter is put on individual pieces of chicken and just adds to the amazing flavor. While roasting, the Test Kitchen was filled with a wonderful aroma that made it difficult to wait until this chicken was done. It's a simple recipe but the family will think you labored away over this flavorful, tender chicken. This will become your go-to chicken recipe for now on.

Number Of Ingredients 9

4 pound(s) whole chicken (doesn't have to be perfect)
2 - lemons
5 - garlic cloves
1 bunch(es) chives or scallions
1 bunch(es) parsley
1/4 cup(s) olive oil
1/2 stick(s) butter, room temperature
1 tablespoon(s) paprika
- salt/pepper to taste

Steps:

  • Zest the lemons, separate. 1 will be for the cavity of the chicken, the other will be mixed with the room temperature butter.
  • Combine the chives or scallions, the zest of one lemon, garlic cloves, parsley and the juice from the two lemons.
  • Stuff the chicken with the mixture.
  • Sprinkle the entire chicken with salt, pepper, and paprika.
  • Drizzle the top with olive oil.
  • Bake at 350 degrees for about 1.5 hours (or until brown and done at internal temperature of 155.)
  • Combine the room temperature butter with the other half of lemon zest. Serve each piece with a teaspoon of the mixture. So tender and flavorful.
