Lemon Blueberry & Chicken Salad image

Nice low-calorie Salad to have in the summer ! Low fat lemon yogurt in it and reduced-calorie mayonnaise. Great way to use any leftover chicken you may have.

Number Of Ingredients 7

2 c fresh or frozen blueberries, divided
3/4 c low fat lemon yogurt
3 Tbsp reduced calorie mayonnaise
1 tsp salt
2 c cubed cooked chicken breasts
1/2 c sliced green onions (scallions)
3/4 c diagonally sliced celery

Steps:

  • 1. Reserve a few blueberries for garnish. In a medium sized bowl, combine yogurt, mayonnaise and salt.
  • 2. Add the remaining blueberries, chicken green onions, celery and bell pepper. Mix gently.
  • 3. Cover and refrigerate to let flavors blend, at least 30 minutes. Serve over endive or other greens garnished with reserved blueberries and lemon slices, if desired.
  • 4. Yield: about 5 cups Per portion: 244 calories, 25 g fat, 22 carbohydrate Serves 4
