2 genous # leeks
3 T. EVOO
.5 c. heavy cream
.5 c. Gruyere, grated
1 T. fresh dill, chopped
1 T. fresh parsley, chopped
4 slices thick cut bacon, diced
1 c. crumbs from dense French bread
1 garlic clove, crushed

Steps:

  • Clip dark out leaves with scissors. Remove root ends, quarter and cut crosswise into 2" pieces. Soak and rinse 2x. Drain well. Heat 2 T. oil over medium high heat. Add leeks, season, and saute' until tender, about 10 min. Transfer to a medium bowl and mix in cream, cheese, and herbs. Wipe out skillet and cook bacon until crisp. turn leek mixture into a 9" pie pan (or similar size). Heat oven to 450°. Use remaining oil to toast garlic and crumbs. Sprinkle over leeks and Bake 12 to 15 min. to golden and bubbly.
