Steps:
- For the simple syrup: Place the sugar and water in a saucepan and bring to a low boil over medium high heat, stiring gently to dissolve the sugar. Ball up the lavender in your hands to bruise the leaves and release the oils slightly. Add the bruised lavender and the mint leaves to the sugar syrup, reduce the heat to medium low and simmer for 10 minutes. Remove from the heat and let cool to room temperature. Strain the syrup, discarding the lavender and mint, and pour into a plastic squeeze bottle. For the lemonade: Fill a tall glass halfway with ice, add the lemon juice, lavender-mint syrup, and enough water to cover. Stir, garnish with the mint sprig and enjoy!
