Lamb Shanks With Pomegranate and Saffron image

6 ribs lamb shanks
6 cups yellow onions chopped
1/2 cups garlic cloves sliced
1/4 cups ginger fresh grated
1 1/2 tablespoons ras el hanout
2 teaspoons saffron threads
1 teaspoon ginger ground
1 teaspoon black pepper ground
6 cups stock or water
4 cups pomegranate juice
1 tablespoon red wine vinegar
2 teaspoons pomegranate molasses
1 head pomegranate seeds
1/4 cup cilantro roughly chopped
1/4 cup pistachios chopped

Steps:

  • heat oven to 325 degrees. Season Lamb shanks with salt
