LAMB SHANKS BRAISED IN RED WINE image

Number Of Ingredients 14

6 lamb shanks (1-1/2 lbs each)
3 tablespoons olive oil
salt & pepper
flour
2 teaspoons peppercorns, crushed
2 bay leaves
8 cups chicken stock
1 bottle Merlot/Cabernet
2 heads garlic, halved crosswise
4 ribs celery, diced large
4 carrots, diced large
1 large onion, in 8 wedges
1 cup mushrooms, sliced 1" thick
bouquet garni- oregano, parsley, thyme rosemary

Steps:

  • Heat oven 325 Sear seasoned, floured shanks in batches in dutch oven till golden brown Put all shanks in pot, add all the rest of the ingredients Braise until tender (about 4 hours) Remove shanks and cover. Strain liquid into saucepan, degrease and simmer till reduced by a third. Serve with mashed potatoes, sauteed mushrooms and glazed carrots
