- Heat oven 325 Sear seasoned, floured shanks in batches in dutch oven till golden brown Put all shanks in pot, add all the rest of the ingredients Braise until tender (about 4 hours) Remove shanks and cover. Strain liquid into saucepan, degrease and simmer till reduced by a third. Serve with mashed potatoes, sauteed mushrooms and glazed carrots
