K's Veggie Bean Salad image

a fantastic crunchy mix of diced veggies and garbanzo beans that goes well with any dressing or sauce you could imagine. Very healthy, packed with protein!

1/2 cucumber
1 small zucchini
1 green bell pepper
1 head broccoli
1 (14 ounce) can garbanzo beans, drained

Steps:

  • dice all veggies.
  • drain garbanzo beans.
  • mix all ingredients together.
  • top with dressing/sauce of your choice. I love it with honey dijon.
  • Makes 4 lunch sized servings, or 6-8 as a side salad.
