Kruidkoek (Spice Cake) image

How to make Kruidkoek (Spice Cake)

Number Of Ingredients 10

275g (9oz) plain flour
200g (7oz) soft dark muscovado sugar
4tsp baking powder
4tsp ground cinnamon
1tsp ground nutmeg
½tsp ground mace
½tsp ground black pepper
50g (2oz) ground ginger
125g (4oz) butter, melted
150ml (¼ pint) milk

Steps:

  • Preheat the oven to *Gas 2, 150°C, fan130°C. Grease and line an 18cm (7in) cake tin. Measure all the ingredients into a large bowl and using an electric hand mixer, whisk them together on a low speed, ensuring the cake mix is lump free.
  • Pour the mixture into the prepared tin and place in the centre of the preheated oven, baking for about 1 hour. When the cake feels firm to touch and a skewer inserted into the centre comes out cleanly, remove from the oven and leave to cool. After 20 minutes remove the cake from its tin and transfer to a cooling rack.
  • *try 300 F for oven [150C = 302F]
  • Note: cake in picture is in a lined with paper, tin
