KOREAN CUCUMBER SIDE DISH image

persian cucumber (long and skinny)
salt
green onions
garlic
korean chili powder
sesame seeds
sesame oil
sugar

Steps:

  • 1) wash vegetables and cut cucumbers into bite size. Cut green onions into very small sizes. Mince garlic. 2) salt cucumbers (lots) and let sit for ~15-30 minutes. This will dehydrate the cucumbers - they should be able to bend slightly when squished. 3) rinse off the salt 4) squeeze cucumbers dry 5) mix with a small amount of minced green onions, garlic, sesame seeds, and sugar. Add in a lot of korean chili powder. mix with hands. 6) can serve immediately or refrigerate for later
