How to make Kona Coffee Crusted Steaks-Hawaiian Style

Number Of Ingredients 15

Serves 2
2 steaks: NY Strip, Rib Eye, Filet Mignon or even Prime Top Sirloin
2 tablespoons Canola oil
4 tablespoons Kona coffee rub (recipe to follow)
2 tablespoons steak butter (recipe to follow)
Kona Coffee Rub - combine all ingredients in small bowl
3 tablespoons finely-ground Kona coffee
1 tablespoon McCormick Montreal steak seasoning
1 teaspoon Hawaiian pink salt
1 teaspoon garlic powder
2 teaspoons fresh cracked pepper
Steak Butter - combine ingredients in small bowl
2 tablespoons unsalted butter, softened
2 shakes Worcestershire sauce
1 teaspoon garlic powder

Steps:

  • Cooking Process:
  • Preheat oven to 450 degrees. Pat steaks dry and sprinkle 1 tablespoon of coffee rub into each side of beef. Using your hands, gently press into the meat. Set aside and let come to room temperature, approximately 15 minutes.
  • Heat a heavy pan on burner over medium high heat. When hot, drizzle oil in center of pan and coat the base. When oil shimmers, add the steaks and cook 3-4 minutes per side until crust is formed.
  • Remove pan from stovetop, add 1 tablespoon of steak butter to each, and place on middle rack of preheated oven. Cook an additional 5-8 minutes, depending on thickness.
  • When finished, remove from oven and set on cutting board and spoon juices from pan over each steak. Let rest at least 5 minutes before serving.

  • We serve our with a creamy Coconut Basmati Rice and locally-grown Waialua asparagus bundles.
