KIWI LIME PIE image

Yield 1 9" pie

Number Of Ingredients 7

8 kiwis, peeled
zest and juice of two limes
1/2 cup sugar
1 tsp cornstarch
7 oz condensed milk (1/2 can)
1 bar (8oz) cream cheese
1 9" prebaked pie crust

Steps:

  • Put four kiwis, lime juice and zest, sugar and cornstarch in the blender or food processor until it's a uniform mush. Then bring to a boil and simmer to reduce the mixture by half. When the fruit has cooled, put it with the cream cheese and condensed milk in the food processor to blend until smooth. Refrigerate for several hours or overnight to set. Spread the mixture above in the bottom of the pie crust, and top with slices from the remaining 4 kiwis.
