Kitchen Sink Italian Turkey Meatloaf image

A couple of weeks ago I picked up a package of ground turkey at the store for dinner, but I had no idea what I wanted to do with it. So when I got home I opened the fridge, looked around and started to take things out and put it on the counter. I sorted out a few items and what was left became a meatloaf. It was delicious. I tried it again, this time using the same ingredients but figuring out how much of what to put in and it was still great. So I present it to you to try and enjoy.

Number Of Ingredients 15

2 pound(s) lean ground turkey
1/2 cup(s) chopped red onion
4 clove(s) minced garlic
1/2 cup(s) chopped fresh spinach
2 tablespoon(s) fresh basil, chopped
2 tablespoon(s) fresh oregano, chopped
1/2 cup(s) cremini mushrooms, or your preference, chopped
1/3 cup(s) caesar salad dressing
1 teaspoon(s) kosher or sea salt
1/2 teaspoon(s) fresh ground black pepper
1 teaspoon(s) crushed red pepper flakes
3/4 cup(s) parmesan cheese, divided
1/2 cup(s) seasoned or plain breadcrumbs
1 - egg, beaten
1/2 cup(s) tomato-basil pasta sauce (or your favorite)

Steps:

  • Pre-heat your oven to 350 deg. F
  • Crumble the ground turkey into a large mixing bowl. Add one-half of the cheese and the remaining ingredients, except the pasta sauce. Combine thoroughly.
  • Scrape the turkey mixture into a well greased loaf pan. Pour on the pasta sauce and then sprinkle on the remaining cheese.
  • Bake on the middle rack in the oven for 55 to 60 minutes or until a meat thermometer reads 155 to 160 deg. F.
  • Remove from the oven, cover loosely with foil and let rest for 5 to 10 minutes. The meatloaf will continue cooking for a few minutes. Slice and serve.
