1 box Tam Tams original/1 box Tam Tams for Passover or 8 oz. egg matzo*
2 large or 3 medium carrots
2 to 3 sticks of celery
1 small to medium onion
½ stick butter
¼ tsp garlic powder
Black pepper to taste
Sugar to taste (1/3 tsp not more)
*salt or chicken soup powder to taste

Steps:

  • Process the Tam Tams in the Cuisineart, using the metal blade, until very fine. Place in large mixing bowl. Peel carrots and process until very fine. Do the same with the celery and onions. Place all in the same large mixing bowl. Add garlic powder, black pepper and sugar. Melt butter in microwave. Add to mixing bowl. Mix everything very will until mixture is very doughy. Prepare two or three sheets of tin foil approximately 16" in length. Divide the "dough" into two or three sections. Place each section on one piece of foil and shape until a long narrow log is formed. Wrap and secure each log so that it is airtight. Bake at 350 degrees for 30 - 40 minutes and open up foil wrap. Bake another 15 - 20 minutes and remove from oven. Lightly pinch the foil together and let stand approximately 5 minutes. Slice into pieces and serve. May be frozen prior to baking. Defrost before baking. Cooking time varies with the size of the logs. If using matzo, it is necessary to add salt or chicken soup powder to seasonings. Serves 6 - 8.
