Kim's Inspiration Apple Sour Cream Cake, Diabetic image

This is my lightened version inspired by Kim127's Recipe #57771 on Food.com. I have reduced the fat and sugar content.

- cake:
1 tablespoon(s) light margarine
4 tablespoon(s) unsweetened applesauce
1/4 cup(s) splenda (or sugar)
1/2 cup(s) egg white
1 teaspoon(s) vanilla
2 cup(s) flour
3/4 cup(s) splenda granular
1 teaspoon(s) baking soda
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt
1 cup(s) fat free sour cream
2 cup(s) chopped apples
- topping:
2 tablespoon(s) chopped walnuts
6 tablespoon(s) unsweetened applesauce
1/2 cup(s) quick oats
1 teaspoon(s) cinnamon
1/4 cup(s) splenda brown sugar blend
2 teaspoon(s) melted butter

Steps:

  • Preheat oven to 350. Grease a 13 x 9 x 2 baking pan.
  • Melt margarine and mix with applesauce. Beat applesauce mix with the Splenda or sugar. Add egg whites and vanilla, beat well.
  • Sift together flour, Splenda, baking soda, baking powder, and salt. Add dry ingredients to the first mixture alternately with 1 cup sour cream. Stir in chopped apples. Spread evenly in greased pan.
  • Mix together ingredients for topping. Sprinkle over batter.
  • Bake for 35-40 minutes.
