KEY LIME PIE - UNBAKED image

For the crust:
1 1/4 cups graham cracker crumbs from 9 (2 1/4 " by 4 3/4 " crackers (1 box will make 3 recipes )
2 Tablespoons sugar
5 tablespoons unsalted butter, melted
For the pie filling:
1- 14 oz can sweetened condensed milk (I used Bordens)
1- 8oz package Philadelphia cream cheese, softened
1/2 Cup Nellie and Joe's KeyLime juice (publix)
Whipped cream:
3/4 cups chilled heavy cream

Steps:

  • For the crust: 350 oven Stir together graham cracker crumbs, sugar and butter in a bowl with a fork until combined well, press mixture evenly onto the bottom of a 10 inch pie plate. Bake for 15 minutes, cool . use rolling pin to break up toasted crumbs. Pie filling; Beat cream cheese and condensed milk together on low until blended. Gradually add in lime juice and continue to beat until well blended. Chill for at least an hour or over night. Whipped cream: Beat cream with an electric mixer until it holds stiff peaks. Asssembly: for every plastic shot glass Layer: rounded teaspoon of crumbs in bottom of glass 2 generous tablespoons pie filling just before serving add dollop of whipped cream shot glasses may be made , covered and refrigerated a day ahead. add whipped cream just before serving.
