KEY-LIME FUDGE image

THIS IS ANOTHER FUDGE THAT I INCLUDE IN MY CHRISTMAS GIFT TINS. VERY GOOD! I GET REQUEST AFTER REQUEST FOR MY RECIPE.

Number Of Ingredients 9

1/4 cup(s) butter
2 1/2 cup(s) sugar
2/3 cup(s) evaporated milk
12 ounce(s) white chocolate chips
2 cup(s) miniature marshmallows
1/3 cup(s) key-lime juice
1/2 cup(s) macadamia nuts (coarsley chopped)
1/4 teaspoon(s) rum extract
1 teaspoon(s) lemon extract

Steps:

  • LINE A 9X9 PAN WITH FOIL. SET ASIDE.
  • PLACE WHITE CHOCOLATE, AND EXTRACTS INTO A 3 QUART SAUCEPAN AND SET ASIDE.
  • SET BUTTER ASIDE TO WARM. HEAT MILK AT MEDIUM HEAT UNTIL WARM, THEN ADD SUGAR. BRING TO A ROLLING BOIL OVER MEDIUM-HIGH HEAT, STIRRING CONSTANTLY WITH A WOODEN SPOON.
  • ADD MARSHMALLOWS AND BUTTER, MIX UNTIL CREAMY. ADD KEY-LIME JUICE AND BRING BACK TO A BOIL STIRRING CONSTANTLY FOR 5 MINUTES. START TIME WHEN BOIL BEGINS. THE MIXTURE WILL BEGIN TO TURN A LITTLE BROWN DURING BOIL, IF YOU GET BROWN FLAKES IN MIXTURE REMOVE FROM HEAT AND LOWER TO A MEDIUM HEAT, AND CONTINUE TO STIR.
  • REMOVE FROM HEAT AND POUR HOT MIXTURE OVER THE CHOCOLATE WITHOUT SCRAPING THE SIDES OF THE HOT SAUCEPAN.MIX UNTIL CHIPS ARE MELTED, THEN STIR IN NUTS. POUR INTO PREPARED PAN.
  • COOL COMPLETLY AT ROOM TEMPERATURE. REMOVE FROM PAN, REMOVE FOIL, CUT INTO SQUARES
