BISCUITS
1/4 c salted butter, melted
3 large eggs
1/3 c coconut flour
1/4 tsp baking powder
1 1/4 c shredded chedder-jack cheese
SAUSAGE GRAVY
1/2 lb breakfast sausage
1/2 c chicken broth
1/3 c heavy cream
2 Tbsp cream cheese
1/2 tsp xanthan gum
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • 1. Preheat oven to 400. I use a silpat mat, or you can use parchment to line your baking pan or cooie sheet. Set aside.
  • 2. To make biscuits, combine all ingredients in a large bowl and stir by hand. Scoop 9 equal portions of dough onto prepared pan. I use a small cookie dough scoop.
  • 3. Bake 15-17 minutes while making sausage gravy.
  • 4. To make the sausage gravy, Cook sausage over med high heat in a skillet, breaking up pieces with a wooden spoon. Don't drain. Add the chicken broth, cream, cream cheese and xanthan gum. Stir and cook on medium until thickened. Add salt and pepper. Serve over warm split biscuits.
