Steps:
- In 4 quart pot combine onion, garlic, lemon zest & bourbon. Bring to a simmer over medium heat, reduce the heat to maintain a simmer and cook until onion is translucent about 10 min. Stir in lemon juice, pepper, Chile powder, mustard, onion powder, salt tomato paste, ketchup, vinegar, pineapple juice, apple, liquid smoke, Worcestershire sauce, brown sugar, molasses, Tabasco & bitters gently simmer for 30 minutes. Remove from heat and puree in a blender.
