Ken's Chili image

Number Of Ingredients 10

2 package country pork ribs
2 pounds ground pork
1 piece green, red & yellow bell pepper diced
1 piece red onion
8 cups chicken stock low sodium
2 cans petite diced tomatoes
2 tablespoons curry, chili, paparika, white pepper, coconut sugar to taste
1 bunch oregano, rosemary, thyme - tied with string
6 piece bayleaf
1/4 cup soy sauce substitute or low sodium

Steps:

  • Step 1 - place ribs in large pot with spices, broth and low sodium or substitute soy sauce. Boil for about two hours or until falls off bone. strain and reserve broth. break pork into pieces and put into broth.
  • Step 2 - Saute peppers, onion, curry, chili, sugar, paparika until tender. Add first can of diced tomatoes during process aftter first half hour. Add second can and continued to simmer down liquid. Once tender put into pot along with rib meat and broth. continue to simmer down for two hours.
  • Step 3 - saute ground pork in olive oil. Strain fat and add to pot
  • Step 4 - soak beans overnight or for quick prep. cook for an hour as directed on bag. Then add roughly one bag worth to mixture adjusting based on amount of liquid
  • Step 4 - serve with sour cream and further spice to taste
