Karen's Special Salsa image

This recipe has many names. Texas Caviar is one....but my friend's know it as Karen's special salsa. It is very different but OH so good! Put it out at your next gathering and it will be gone in a heartbeat.

Number Of Ingredients 13

3/4 cup(s) apple cider vinegar
1 tablespoon(s) water
1/4 cup(s) olive oil
1 tablespoon(s) salt
1/2 teaspoon(s) pepper
1 cup(s) sugar
1 can(s) pinto beans, rinsed and drained
2 can(s) black-eyed peas, rinsed and drained
1 can(s) shoe peg corn
1 medium red onion, chopped
1 medium green pepper, chopped
1 medium red or yellow pepper, chopped
1 jar(s) pimiento, chopped

Steps:

  • Boil the vinegar, water, olive oil, salt, pepper, and sugar on the stove and cool.
  • Rinse and drain the pinto beans, black eyed peas, and corn. Add the onion, peppers and pimiento.
  • Pour the sauce that was cooked on the stove over all the ingredients and marinate overnight in refrigerator. Enjoy!
