Just Peachy Muffins / Cassies image

Love these tender muffins with a cup of coffee in the mornins... Photos are mine.

Number Of Ingredients 11

1 - egg
1/4 cup(s) milk
1/4 cup(s) sour cream
1/4 cup(s) vegetable oil
1 1/2 cup(s) all purpose flour
1/2 cup(s) sugar
1/2 teaspoon(s) salt
2 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
1 cup(s) chopped, peaches - fresh or frozen
cinnamon - & sugar mixture for the tops - optional

Steps:

  • Preheat oven to 350 degree F. Line a muffin pan with paper muffin cups or spray with non stick cooking spray.
  • In a bowl, beat egg; add milk, sour cream and oil.
  • Combine flour, sugar, baking powder, cinnamon and salt.
  • Stir into the egg mixture just until moistened. Stir in the peaches.
  • Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.
  • Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean. I have also made a peach glaze for the tops out of preserves, that was yummy. Enjoy!
