Love these tender muffins with a cup of coffee in the mornins... Photos are mine.

Steps:
- Preheat oven to 350 degree F. Line a muffin pan with paper muffin cups or spray with non stick cooking spray.
- In a bowl, beat egg; add milk, sour cream and oil.
- Combine flour, sugar, baking powder, cinnamon and salt.
- Stir into the egg mixture just until moistened. Stir in the peaches.
- Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.
- Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean. I have also made a peach glaze for the tops out of preserves, that was yummy. Enjoy!
