Joy of Cooking Pumpkin pie filling image

This is one my favorite & easy pumpkin pie fillings to make. When time is limited I use a pre frozen 9 inch pie shell. Its up to 55 minutes for baking, its takes about a hour, depending on your oven. I found this recipe on The Joy of Cooking web site.

Number Of Ingredients 7

3 large eggs
1/2 cup(s) heavy whipping cream
2 cup(s) pumpkin puree
1/2 cup(s) light brown sugar
1 teaspoon(s) cinnamon
1/2 tablespoon(s) ground ginger
1/8 teaspoon(s) salt

Steps:

  • Pre heat oven temperature to 375 degrees F (190 degrees C) and place rack in bottom third of the oven.
  • Place the baked pie on a wire rack to cool. Serve at room temperature. Store any leftovers in the refrigerator. Makes one 9 inch pie.
