Johnny Cake image

This a cornbread recipe, but my Mother-in-law always called it Johnny Cake. You can't go wrong with this one, honestly. One other quick note, any leftovers are delicious toasted.

Number Of Ingredients 8

1 egg
1/4 c sugar
1 tsp baking soda
1 c milk
2 tsp cream of tartar
1/2 tsp salt
1 c flour
1/2 c corn meal, yellow

Steps:

  • 1. In a bowl add egg,sugar. Put baking soda into the cup of milk and stir it in. (It will foam a little bit.) add this to egg and sugar.
  • 2. Sift together cream of tartar, salt, flour and corn meal. Add these dry ingredients to egg mixture. Stir until completely mixed.
  • 3. Depending on how thick you like your cornbread, use and 8x8 pan or double recipe and use 9x11 baking dish or jellyroll pan. Bake at 450 degrees for 20 minutes or until brown and sponge like to touch.
