Jicama Salad with Watercress, Romaine and Lime-Cilantro Dressing image

1 pound Jicama (medium), peeled and cut into sticks
1 bunch Watercress, large stems removed (or arugula or mache)
2 cups Romaine leaves, cut into 1/4 inch slices
