Jelly Slice image

A "slice" is a typical Australian bar-type cookie. They come in many different variations and flavors. This one is great because it doesn't involve any baking, though it does require at least two hours of divided refrigeration time. You can use other flavors of jello, too - just make its compatible with the lemon flavoring in the milk base.

3/4 cup(s) butter, melted
3 cup(s) graham crackers, crushed
2 teaspoon(s) unflavored gelatin
1/2 cup(s) boiling water
1 can(s) sweetened condensed milk (395 g)
2 tablespoon(s) fresh squeezed lemon juice
1 teaspoon(s) grated lemon zest
1 package(s) strawberry jello (3 ounce)
2 teaspoon(s) unflavored gelatin

Steps:

  • Grease a 13x9 inch baking pan. Line with parchment paper.
  • Combine the melted butter and graham crackers in a bowl, mix to combine. Press into the bottom of the prepared pan.
  • Dissolve 2 teaspoons of unflavored gelatin in the boiling water. With a mixer or a good whisk, combine the dissolved gelatin with the condensed milk, lemon juice and lemon zest. Beat until well mixed. Pour the mixture over the crumb base and refrigerate for 1 hour or until it is set.
  • Make the jello per the instructions on the packet, adding in the extra 2 teaspoons of unflavored gelatin. Coll the mixture to room temperature, then pour over the milk base. Refrigerate for at least 1 more hour or until set.
  • To serve, cut into small squares with a hot knife.
