Japanese Takana Pork - Microwave Recipe image

A Japanese-style dish made from takana or pickled mustard leaves with thinly sliced pork. It's very tasty and healthy dish. Add plenty of vegetables to make this dish colorful.

150 g thinly sliced pork (Tonkatsu cut)
1 teaspoon grated ginger
1 tablespoon sake
1/2 tablespoon soy sauce
1/2 tablespoon sesame oil
30 g mustard, leaves (takana)
50 g enoki mushrooms
1 piece dried shiitake mushroom (soaked in 1 cup water, stock reserved)
1/4 cup shiitake water
3 cm pc carrots
2 pieces scallions
1/4 piece yellow onion
1 teaspoon cornstarch
2 teaspoons water

Steps:

  • Slice the pork into 2-cm strips then marinate it with the grated ginger, sake, soy sauce and sesame oil for 30 minutes.
  • Drain the shiitake then remove the stem. Slice the head thinly. Chop the onion and the scallions. Slice the carrot into thin strips.
  • Mix the pork and vegetables in a microwave-safe bowl then cover/wrap it with a microwave-safe kitchen wrap. Put in the microwave then cook for 5 minutes using 600W.
  • Take out from the microwave then add the cornstarch water then mix.
  • Put back the cover/wrap then microwave for 1 minute. Let it stand for 2 minutes before taking the cover.
  • Mix well before serving.
