JAPANESE COLD SOBA NOODLES image

Number Of Ingredients 9

1/2 lb soba noodles
2 tbsp peanut or canola oil
3 tbsp rice vinegar or white
1 tsp dark sesame oil
2 tsp tamari or soy sauce
1 1/2 tsp minced fresh ginger
1 tbsp coarsely chopped fresh cilantro - optional
1 carrot cut into small 1 inch sticks
sesame seeds - optional

Steps:

  • Cook noodles according to package directions in boiling salted water - usually less than 5 min. Drain and rinse under cool water. Set aside to continue draining. Mix oil, vinegar, tamari, sesame oil, ginger and cilantro. Add the noodles and vegetables and toss well.
